After a 1994 Seinfeld episode catapulted babka to stardom, modern bakers began to put their own twist on this traditional twisted loaf. Here's my take — a decadent chocolate, orange and cardamom braid that will satisfy your biggest chocolate craving.

Doughnuts

Doughnuts — or donuts, as they're more popularly known in the U.S. — have strong ties to Americana, from the Donut Dollies of World War II to the invention of the automatic donut-making machine. So my doughnuts are inspired by another slice of Americana — the state fair. These are my maple-bacon doughnuts and sweet-corn doughnuts with spiced apple filling!

Povitica

Povitica is a traditional Eastern European holiday bread. The key to its distinctive spirals is to roll the dough so thin it's practically see-through, then spread it with a thin layer of chocolate and walnut filling before rolling it into a sausage-like log that is folded into the pan. This rolling and folding also gives it a cake-like texture and delicate crumb that practically melts in your mouth.

A Sweet Fruit Loaf

A krantz, or kranz, is like a babka in that it is made of enriched dough swirled with chocolate, cinnamon or a fruity filling. Mine is filled with sweetened orange butter and fresh blueberries, with a hint of cardamom for a spicy warm glow.

Sweet European Buns

Two different types of sweet European buns. That was the brief for this technical challenge. I chose saffron-infused St. Lucia buns and poppy seed snails, known as Mohnschnecken.

Apricot Couronne

The couronne is similar to the king cake, or Roscón de Reyes, which was traditionally served on Epiphany to celebrate the coming of the Magi to meet the infant Jesus. This version uses an enriched dough with a sweet, fruity filling that is shaped into a circle like a crown, or, in French, couronne. A warm apricot glaze gives it a golden sheen, followed by a thick drizzle of rich, white icing and a generous sprinkle of sliced almonds for a rich, royal teatime treat!

A Decorative Loaf

The challenge for this episode of The Great British Bake Off was to make a decorative loaf of any shape or flavor. For my decorative loaf, I decided to make star bread. To twist things up a bit (pun intended), I chose to use two different fillings, raspberry jam and a chocolate almond cream cheese.

An Enriched Celebratory Loaf

For my “enriched celebratory loaf,” I chose to make a king cake. I used a babka-like dough, and my filling was inspired by the colors traditionally found on top of a king cake: green for faith, purple for justice and gold for power. Combining lemon, lavender and pistachios with a poppyseed filling gave it an almost Middle Eastern quality.
